This Mother’s Day, how about taking your mom to the casino for some gaming and a delicious meal. Emerald Island and Rainbow Club casinos in downtown Henderson are getting ready to celebrate Mother’s Day by unveiling special menus, served exclusively May 14.
The Emerald Island Grille’s first course will be a choice of crab corn chowder or Waldorf salad. For the main course, guests can pick between the beef Wellington and Maine lobster thermidor. Dessert will be a peanut butter chocolate cake with mocha coffee sauce and fresh whipped cream.
At the Rainbow Club, Triple B (Brooks Brothers Burgers) will offer guests an option of shrimp bisque with parmesan crostini or mixed baby greens tossed in grilled peach vinaigrette, crumbled goat cheese, fresh blueberries, and toasted walnuts for the starter. The main course will be a choice of a slow roasted prime rib with au jus, herb roasted potatoes and cream spinach or bacon crusted baked lobster tail with sauteed mushrooms and grape tomatoes with grilled asparagus, and herb roasted potatoes. Finally, guests will enjoy a chocolate cake with raspberry sauce, fresh whipped cream and mint.
