HENDERSON, NV – The Rainbow Club Casino in Henderson is excited to announce their first official beer dinner in collaboration with the Mojave Brewing Company. The beer dinner will take place on February 27, 2023, at the Rainbow Club Casino located in Downtown Henderson’s Historic Water Street District and will be serving four flavorful courses carefully paired with a Mohave Brewing Company beer or cider.
This special menu was crafted by Emerald Island and Rainbow Club Casino Culinary Director Scott Pajak, who worked closely with Mojave Brewing to cultivate the finest pairings.
The first course on the menu includes a baby arugula salad topped, crisp cucumbers, pickled red onion, a charred tomato vinaigrette topped with crumbled bleu cheese and toasted almonds for crunch. Chef Pajak has created this dish to be paired with Mojave brewing’s Italian Pils. Immediately following the salad is a special lump crab cake with classic remoulade sauce & apple parsley salad paired with a Ruby Soho hard cider. For the main entrée, Chef Pajak will serve a pan-seared pork chop on southern braised greens with sweet potato gravy and pecan relish paired with a Mojave imperial stout. For dessert, a fresh lemon bread pudding with blueberry grand marnier sauce topped with whipped cream served with a chilled Mojave orange wheat.
“We are very excited to host our first publicly-open beer dinner here at the Rainbow Club,” said Pajak. “After the success we saw with our family and friends’ beer dinners, it’s very exciting to be able to make these events open to the public for everyone to enjoy. I’m proud of the work we’ve put into creating these unique pairings, each of which bring a new combination of flavors that we’re certain will be a hit. The Mojave Brewing Company makes some of the finest beers and ciders in the city, and I’m glad we can come together on an event like this that’s a good time for everyone involved.”
