Rio Hotel & Casino welcomes an all-new culinary concept, Tacos Del Rio Cocina & Bar, now open. Designed as a vibrant, high-energy destination on the casino floor, the restaurant offers a modern take on Mexican cuisine where bold flavor meets a dynamic bar experience.
Rooted in familiar Mexican favorites, Tacos Del Rio elevates classic dishes through refined technique, layered sauces and vibrant presentation. The menu features craveable staples such as enchiladas, fajitas and street tacos, alongside coastal and smoked influences including Gulf shrimp ceviche and smoked chili lime wings. Signature offerings include Birria Tacos, Queso Fundido, Chile Relleno and a shareable, two-pound burrito prepared with birria, chicken tinga, shrimp or vegetables.
The concept brings a fresh perspective to traditional flavors, delivering bright, citrus driven profiles and bold, unapologetic taste. Each dish is designed to be both approachable and memorable, transforming familiar favorites into elevated, Vegas worthy experiences.
